Natural Changes in Honey Over Time

Honey does not actually spoil, but it will still experience natural changes that might be confusing to consumers:

  • Crystallization: Honey can also thicken or turn grainy. It is because the glucose will crystallize out of solution. This is not spoilage but rather an indicator of raw, pure honey. A warm bath in water usually liquifies it.
  • Changes in color and flavor: With age, honey will darken slightly and lose part of its scent and taste but will still be safe to eat.

How to Preserve Honey

To preserve honey’s quality for decades or even centuries:

  • Honey should be stored in a cool, dry place away from direct sunlight.
  • The container should be kept tightly sealed to prevent moisture absorption.
  • People should avoid refrigeration, which speeds up crystallization.
  • It is advisable to maintain a stable temperature ideally between 10°C and 18°C (50°F to 64°F).
